There are many choices, and this recipe (below) is my current favorite. But I was out of wheat germ, so I substituted bran, resulting in a gutsier product. Great with Irish cheddar, or yogurt and jam (or all of the above, if that is to your taste). Happy St. Patrick\u2019s Day!<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone wp-image-8035\" src=\"https:\/\/eachdayisacelebration.com\/wp-content\/uploads\/2017\/03\/SodaBread.jpg\" alt=\"\" width=\"450\" height=\"374\" srcset=\"https:\/\/eachdayisacelebration.com\/wp-content\/uploads\/2017\/03\/SodaBread.jpg 903w, https:\/\/eachdayisacelebration.com\/wp-content\/uploads\/2017\/03\/SodaBread-300x249.jpg 300w\" sizes=\"auto, (max-width: 450px) 100vw, 450px\" \/><\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone wp-image-8036\" src=\"https:\/\/eachdayisacelebration.com\/wp-content\/uploads\/2017\/03\/StPatrickShepherd.jpg\" alt=\"\" width=\"450\" height=\"499\" srcset=\"https:\/\/eachdayisacelebration.com\/wp-content\/uploads\/2017\/03\/StPatrickShepherd.jpg 676w, https:\/\/eachdayisacelebration.com\/wp-content\/uploads\/2017\/03\/StPatrickShepherd-270x300.jpg 270w\" sizes=\"auto, (max-width: 450px) 100vw, 450px\" \/><\/p>\n<p><b>Irish Brown Soda Bread<\/b><\/p>\n<p>1-1\/2 cups unbleached all-purpose flour, plus more for sprinkling<br \/>\n1 cup whole-wheat flour<br \/>\n1\/2 cup old-fashioned rolled oats<br \/>\n1\/4 cup toasted wheat germ (or bran)<br \/>\n1-1\/2 teaspoons baking soda<br \/>\n1 teaspoon salt<br \/>\n6 T cold unsalted butter cut into bits<br \/>\n1-1\/3 cups buttermilk or plain yogurt (I\u2019ve tried both)<\/p>\n<p>Preheat oven to 425\u00ba.<\/p>\n<p>Sprinkle baking sheet with a little flour.<\/p>\n<p>In a large bowl whisk together flours, oats, wheat germ\/bran, baking soda, and salt. With fingertips rub in butter until mixture resembles coarse meal. Add buttermilk\/yogurt and mix quickly until dough is evenly moistened. DO NOT OVERMIX.<\/p>\n<p>Turn dough onto floured surface and shape quickly into neat sphere, sprinkling with more flour as needed. On prepared baking sheet pat dough out into 7-inch round. With sharp knife cut shallow X in top.<\/p>\n<p>Bake 25 minutes or so (depends on your oven) until bread looks set in center.
