I don’t think your winters get cold enough for the trees to produce sweet sap. If global warming continues, maybe Vermont, Michigan, Ontario and Quebec won’t be cold enough either.
It is worrisome. The last time we were in Vermont we were told that maple growers are obliged to tap earlier and earlier. A fruit farmer also told us that the winters are no longer severe enough to kill most of the insects between growing seasons.
